Ingredients
- 1 pound ground beef
- 1/2 onion
- 1/4 cup taco seasoning mix
- 14 ounces diced tomatoes,undrained
- 1 cup fire roasted corn kernals drained
- 3/4 cup white long grain rice,uncooked
- 2 cups beef broth
- 1 1/2 cups mexican blend shredded cheese
How To Make mexican beef and rice skillet

Step 1Cook onion in large skillet over med. heat for 1 -2 minutes, then add ground beef, brown meat and then drain.

Step 2Return to skillet to heat, add taco seasoning, diced tomatoes,corn,rice and beef broth, stir until combined.

Step 3Bring to a small boil, then reduce heat to a simmer and cover. Cook for 20 minutes stirring at 10 minutes. Stir and top with cheese.

Step 4Cover and cook on low for another 3 minutes until cheese is melted. Can top with your favorite toppings, or put mixture in taco shells.
