Ingredients

  • 1 pound ground beef
  • 1/2 onion
  • 1/4 cup taco seasoning mix
  • 14 ounces diced tomatoes,undrained
  • 1 cup fire roasted corn kernals drained
  • 3/4 cup white long grain rice,uncooked
  • 2 cups beef broth
  • 1 1/2 cups mexican blend shredded cheese

How To Make mexican beef and rice skillet

  • Step 1
    Cook onion in large skillet over med. heat for 1 -2 minutes, then add ground beef, brown meat and then drain.
  • Step 2
    Return to skillet to heat, add taco seasoning, diced tomatoes,corn,rice and beef broth, stir until combined.
  • Step 3
    Bring to a small boil, then reduce heat to a simmer and cover. Cook for 20 minutes stirring at 10 minutes. Stir and top with cheese.
  • Step 4
    Cover and cook on low for another 3 minutes until cheese is melted. Can top with your favorite toppings, or put mixture in taco shells.
