I found this recipe on a container of hummus I purchased recently and increased the ingredients to be able to make it a lunch for 2. Google pic until I can find my camera cord.

Ingredients

  • 1 - boneless skinless chicken breast
  • 1 cup italian dressing
  • 6 tablespoons hummus
  • 4 - romaine lettuce leaves
  • 2 slices sliced red onion
  • 4 large slices tomato
  • 4 tablespoons mild salsa

How To Make mediterranean wraps

  • Step 1
    Marinate chicken in Italian dressing. Grill so chicken is cooked thoroughly. Cut into thin slices and set aside.
  • Step 2
    On a large wrap or just flour tortilla spread 3 Tbsp hummus, 2 lettuce leaves, 2 slices of tomato, 1 slice separated red onion and 1/2 the prepared chicken. Top with 2 Tbsp of mild salsa and roll into wraps.
  • Step 3
    For those who don't eat a lot of meat, just replace the chicken with extra firm tofu. I like it better than with chicken!
