I enjoy meatloaf about anyway it's prepared. I simply began adding ingredients to a regular meatloaf & it turned out delicious. I tend to slow-bake meat dishes. Try this recipe, you'll enjoy it, too.

Ingredients
- 1-1/2 pound ground beef
- 1 pound pork sausage
- 2 - eggs
- 1/2 package saltine crackers (crushed)
- 1/2 package taco seasoning (dry)
- - black pepper, crushed red pepper, garlic powder, onion (chopped or minced)
- TOPPING:
- 1/2 bottle pecante sauce
- 2 tablespoons mustard (your choice)
- 2 teaspoons lemon juice
- 1/4 cup brown sugar
How To Make meatloaf with a southwest twist

Step 1Heat oven to 300 degrees. Mix together first five ingredients & spices (I use my hands). Place into a pan/dish a bit larger than meat mixture. Cover with foil. Bake for 1 hr. Mix together the topping ingredients while meat is baking. Remove from oven, remove foil, drain off excess fluids, spoon topping over meat. Turn oven down to 200 degrees & continue baking for 1/2 hr (just to heat topping). Let set for a few minutes before serving. Enjoy!
