mama's old world casserole

This was one of my mother's 'speciality' dishes. I must admit, as a child I didn't much care for it, because I didn't like sauerkraut. While mom was not about to cook my dish separately without the sauerkraut (as I tried to talk her into doing) I was allowed to scrape the sauerkraut off my portion. Now, I love this dish, sauerkraut included!

Ingredients

  • 4 slices bacon, roughly chopped
  • 2 tablespoons flour
  • 1/2 cup water
  • 2 - cans sauerkraut, 15 oz. each
  • 2 - potatoes, peeled and cubed
  • 3 small apples, cored and roughly chopped (peel if desired)
  • 3 tablespoons brown sugar
  • 1 and 1/2 teaspoons caraway seed
  • 3 pounds polish sausage, cut into 3-inch pieces

How To Make mama's old world casserole

  • Step 1
    Fry bacon in large skillet. Stir flour into drippings in pan, brown slightly. Slowly stir in water over medium heat.
  • Step 2
    Add all remaining ingredients, mixing well. Cover, and simmer over medium-low heat for about an hour, or until potatoes are tender and all flavors are blended. Enjoy!
