mama's old world casserole
This was one of my mother's 'speciality' dishes. I must admit, as a child I didn't much care for it, because I didn't like sauerkraut. While mom was not about to cook my dish separately without the sauerkraut (as I tried to talk her into doing) I was allowed to scrape the sauerkraut off my portion. Now, I love this dish, sauerkraut included!

Ingredients
- 4 slices bacon, roughly chopped
- 2 tablespoons flour
- 1/2 cup water
- 2 - cans sauerkraut, 15 oz. each
- 2 - potatoes, peeled and cubed
- 3 small apples, cored and roughly chopped (peel if desired)
- 3 tablespoons brown sugar
- 1 and 1/2 teaspoons caraway seed
- 3 pounds polish sausage, cut into 3-inch pieces
How To Make mama's old world casserole

Step 1Fry bacon in large skillet. Stir flour into drippings in pan, brown slightly. Slowly stir in water over medium heat.

Step 2Add all remaining ingredients, mixing well. Cover, and simmer over medium-low heat for about an hour, or until potatoes are tender and all flavors are blended. Enjoy!
