·use your favorite mac and cheese recipe, but add cooked crisp crumbled bacon to it do not bake it as usual
How to Make mac and cheese stuffed peppers
- take the top off your peppers, remove seeds, can add them if you like extra fibre, steam or lightly cook peppers in water, just to soften a little
- cool them, then stuff them with the mac and cheese, you can put the tops back on if you like
- sit them upright in your baking dish, surround them with your canned diced tomatoes or stewed tomatoes or tomato or v8 juice. cover with foil and bake about 1hr. 20 min. 375-400 check to see if peppers are soft enough to your taste
