lynn's sausage bake
My daughter that lives in Colorado made this dish for my husband and me while visiting. I thought it so good that I asked her to jot down the ingredients and how-to. Lynn is a wonderful cook, she did not learn it from me but I have bragging rights on what a good cook she is.

Ingredients
- 1 package sausage links (i used mild italian)
- 1 large green pepper, cut into strips
- 1 large red pepper, cut into strips
- 1 large yellow pepper, cut into strips
- 1 large white onion, cut into thin rings
- 3 pounds red potatoes, cut into quarters or bite size pieces
- 1 package 8 oz., sliced fresh mushrooms
- - olive oil to lightly coat all
- - salt, pepper, onion salt and parsley
How To Make lynn's sausage bake

Step 1Easiest dish to make! Only have to cut all sausage links into bite-size pieces.

Step 2I put all of the sliced veggies into a large bowl, coat all lightly with olive oil and toss to coat. Add the sliced sausage pieces to this and spread out on two baking sheets.

Step 3Bake at 400 degrees, tossing every 15 minutes or so for an hour. I made all the day before and only baked for 45 minutes, then the day needed I baked for the final 15 minutes to warm through.
