low country grits and shrimp

This is a great recipe when you have a lot of people over. 1 pot... that's all and make clean up fast so you have more time to have fun. It can be made early and put to the side on low until you are ready to serve. I like to serve this with my cheddar cheese and garlic biscuits.

Made in one pot, these shrimp and grits are pure Southern comfort food and super easy to make. The creamy grits are full of fresh veggies that add a lot of flavor to the dish. There's just a touch of spice that's nice with the sweet shrimp. A versatile recipe that can be served for brunch or dinner. We added a cheddar garlic drop biscuit for a delicious meal.

Ingredients

  • 1/2 stick butter
  • 1 medium rell bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 2 stalks green onions, chopped
  • 1 medium yellow onions, chopped
  • 1 clove garlic, chopped
  • 4 cups water
  • 1 cup uncooked quick-cooking grits
  • 1 1/2 teaspoons salt or to taste
  • 1 1/2 teaspoons black pepper or to taste
  • 1 tablespoon Old Bay seasoning
  • 1/4 cup milk
  • 1 pinch cayenne pepper
  • 1 pound medium shrimp, peeled and deveined (thawed if frozen)
  • 1 cup sharp chedder cheese

How To Make low country grits and shrimp

  • Cook peppers, onion, and garlic in a Dutch oven with butter.
    Step 1
    In a large Dutch oven, add butter, peppers, onions, and garlic. Cook for 5 minutes on medium to high.
  • Add water.
    Step 2
    Add water.
  • Add grits.
    Step 3
    Add grits.
  • Add seasonings.
    Step 4
    Add salt, pepper, and Old Bay.
  • Bring to a boil and simmer.
    Step 5
    Bring to a boil. Turn the heat down and simmer for 10 - 15 minutes or until the grits are cooked.
  • Add milk and cayenne pepper.
    Step 6
    Once grits are cooked, add milk and a pinch of cayenne.
  • Add shrimp and simmer.
    Step 7
    Add shrimp and simmer for about 5 minutes or until the shrimp are cooked.
  • Stir in the cheese.
    Step 8
    Stir in the cheese.
  • Remove from heat, cover, and let sit for 10 minutes.
    Step 9
    Remove from heat. Cover and let sit for about 10 minutes.
