low carb stuffed peppers
I love stuffed peppers but never made them myself and everyone tells me how easy they are to make. I found this recipe while searching many low carb lunches and dinners. Easy to make, delicious and healthy, so what's not to love?

Ingredients
- 2 tbsps - butter
- 1 - red onion, finely diced
- 4 - peppers, red, green, yellow, orange, choose what you like
- - 1-1/2 pounds ground beef
- 2 - cloves garlic, minced
- 3.5 0z - button mushrooms, finely chopped
- 2 tsp - thyme
- 2 tsp - oregano, fresh/dried
- 1 slice - smokey bacon, cooked diced
- 1 cup - grated or shredded cheese
- 8.5 0z - canned tomatoes, diced
How To Make low carb stuffed peppers

Step 1Heat the butter and fry the onion and garlic on a medium heat.

Step 2Add the mince/ground beef and brown thoroughly. Add the remaining ingredients, and stir.

Step 3Simmer on a low heat for 15 minutes to reduce the liquid and thicken the mixture. Stir occasionally.

Step 4Cut the tops from the peppers,cut in half and remove all the seeds.

Step 5Press the beef mixture into each pepper firmly, then place each one in an oiled baking dish.

Step 6Sprinkle with grated/shredded cheese. Bake at 350F for 20 minutes.
