I created this first-ever meat roll recipe, from Louisiana Cowboy creation. It's so great with macaroni and cheese,lettuce-only salad, and some dinner rolls.

1 Tbspavocado oil

1 mdyellow onion, diced

2banana peppers, sliced

1 lgcarrot, chopped

1 mdred bell pepper, seeded and chopped

1 TbspCreole seasoning

1 tspgarlic powder

1 lbground beef
-
1 lbground pork
-
2 ccrushed barbecue potato chips, divided

2 lgeggs, beaten

1 cbrown sugar barbecue sauce, divided

1packet dry onion soup mix
-
1 Tbspsteak seasoning

8 slicedeli honey ham
-
8 ozsharp cheddar cheese, shredded
How To Make louisiana cowboy meat roll

1Preheat oven to 350 degrees F.

2Coat a baking sheet with cooking spray.

3Heat avocado oil in a large, deep skillet over medium-high heat. Add diced yellow onion, sliced banana peppers, chopped carrots, and chopped red bell peppers. Saute for 5 minutes or until tender.

4Season with Creole seasoning and garlic powder. Remove from heat and set aside.

5In a large bowl combine ground beef, ground pork, crushed potato chips, beaten eggs,1/2 cup barbecue sauce, onion soup mix, and steak seasoning; mix well for 3 minutes.

6Flatten out the meat into a large square on wax paper. Place the deli ham slices on top of meat. Spoon the sauteed veggies over the top of ham slices. Sprinkle with shredded sharp cheddar cheese over the top.

7Using the wax paper roll the meat jelly roll style sealing the edges. Place seam side down on greased baking sheet.

8Bake at 350 degrees for about 45 minutes. Pour the remaining barbecue sauce over top. Sprinkle with remaining crushed potato chips and cook another 10 minutes.
