I created this first-ever meat roll recipe, from Louisiana Cowboy creation. It's so great with macaroni and cheese,lettuce-only salad, and some dinner rolls.

  • 1 Tbsp
    avocado oil
  • 1 md
    yellow onion, diced
  • 2
    banana peppers, sliced
  • 1 lg
    carrot, chopped
  • 1 md
    red bell pepper, seeded and chopped
  • 1 Tbsp
    Creole seasoning
  • 1 tsp
    garlic powder
  • 1 lb
    ground beef
  • 1 lb
    ground pork
  • 2 c
    crushed barbecue potato chips, divided
  • 2 lg
    eggs, beaten
  • 1 c
    brown sugar barbecue sauce, divided
  • 1
    packet dry onion soup mix
  • 1 Tbsp
    steak seasoning
  • 8 slice
    deli honey ham
  • 8 oz
    sharp cheddar cheese, shredded

How To Make louisiana cowboy meat roll

    Preheat oven to 350 degrees F.
  • 2
    Coat a baking sheet with cooking spray.

    Heat avocado oil in a large, deep skillet over medium-high heat. Add diced yellow onion, sliced banana peppers, chopped carrots, and chopped red bell peppers. Saute for 5 minutes or until tender.

    Season with Creole seasoning and garlic powder. Remove from heat and set aside.

    In a large bowl combine ground beef, ground pork, crushed potato chips, beaten eggs,1/2 cup barbecue sauce, onion soup mix, and steak seasoning; mix well for 3 minutes.

    Flatten out the meat into a large square on wax paper. Place the deli ham slices on top of meat. Spoon the sauteed veggies over the top of ham slices. Sprinkle with shredded sharp cheddar cheese over the top.

    Using the wax paper roll the meat jelly roll style sealing the edges. Place seam side down on greased baking sheet.

    Bake at 350 degrees for about 45 minutes. Pour the remaining barbecue sauce over top. Sprinkle with remaining crushed potato chips and cook another 10 minutes.
