Ingredients
- 1 tablespoon olive oil
- 1 cup smithfield thick cut bacon(chopped)
- 1 cup diced ham
- 3 - celery stalk diced
- 1 - green bell pepper diced
- 1 medium white onions diced
- 2 - jalapeno peppers diced
- 1 teaspoon fresh thyme
- 1 tablespoon fresh cilantro diced
- 1 can 14.5 oz fire roasted diced tomatos with garlic
- 1 bag 28oz frozen blackeye peas
- 1 box 48oz chicken broth
- 1 can chicken broth (small)
- 11/2 cups water
- 2 boxes cilantro lime rice by zatarain's
- - salt and pepper to taste
How To Make loaded cilantro hoppin john

Step 1In a large pot add the Olive oil over medium low heat.

Step 2Add the bacon, ham. Cook until bacon is brown.

Step 3Add the celery, bell pepper, onion, jalapeno. Cook about five minutes.

Step 4Add salt and pepper, cilantro and thyme.

Step 5Add the tomatoes, and box of chicken broth. Bring to a boil.

Step 6Add the peas. Simmer about an hour.

Step 7In medium pot under medium heat add the can chicken broth and water.

Step 8Add the two boxes of rice. Bring to a boil. Cover, on low heat and simmer 25 minutes.

Step 9Serve beans over the rice!
