If you like Red Beans & Rice, you will love this recipe! It's not your ordinary Hoppin John recipe! This one is loaded with bacon, ham and so many seasonings that brings it all together!

Ingredients

  • 1 tablespoon olive oil
  • 1 cup smithfield thick cut bacon(chopped)
  • 1 cup diced ham
  • 3 - celery stalk diced
  • 1 - green bell pepper diced
  • 1 medium white onions diced
  • 2 - jalapeno peppers diced
  • 1 teaspoon fresh thyme
  • 1 tablespoon fresh cilantro diced
  • 1 can 14.5 oz fire roasted diced tomatos with garlic
  • 1 bag 28oz frozen blackeye peas
  • 1 box 48oz chicken broth
  • 1 can chicken broth (small)
  • 11/2 cups water
  • 2 boxes cilantro lime rice by zatarain's
  • - salt and pepper to taste

How To Make loaded cilantro hoppin john

  • Step 1
    In a large pot add the Olive oil over medium low heat.
  • Step 2
    Add the bacon, ham. Cook until bacon is brown.
  • Step 3
    Add the celery, bell pepper, onion, jalapeno. Cook about five minutes.
  • Step 4
    Add salt and pepper, cilantro and thyme.
  • Step 5
    Add the tomatoes, and box of chicken broth. Bring to a boil.
  • Step 6
    Add the peas. Simmer about an hour.
  • Step 7
    In medium pot under medium heat add the can chicken broth and water.
  • Step 8
    Add the two boxes of rice. Bring to a boil. Cover, on low heat and simmer 25 minutes.
  • Step 9
    Serve beans over the rice!
