1 Tbspolive oil

1 csmithfield thick cut bacon(chopped)

1 cdiced ham
-
3celery stalk diced

1green bell pepper diced
-
1 mdwhite onions diced

2jalapeno peppers diced
-
1 tspfresh thyme
-
1 Tbspfresh cilantro diced

1 can14.5 oz fire roasted diced tomatos with garlic

1 bag28oz frozen blackeye peas
-
1 box48oz chicken broth
-
1 canchicken broth (small)
-
11/2 cwater
-
2 boxcilantro lime rice by zatarain's

salt and pepper to taste
How To Make loaded cilantro hoppin john

1In a large pot add the Olive oil over medium low heat.

2Add the bacon, ham. Cook until bacon is brown.

3Add the celery, bell pepper, onion, jalapeno. Cook about five minutes.

4Add salt and pepper, cilantro and thyme.

5Add the tomatoes, and box of chicken broth. Bring to a boil.

6Add the peas. Simmer about an hour.

7In medium pot under medium heat add the can chicken broth and water.

8Add the two boxes of rice. Bring to a boil. Cover, on low heat and simmer 25 minutes.

9Serve beans over the rice!
