Linguica is a form of Portuguese smoke cured pork sausage seasoned with garlic and paprika. It can be found in speciality markets or online at such sites as: Gasparssausage.com or chourico.com love these. When I get back East to visit, I usually get one of these at a local Portuguese bakery in Fall River, MA. A great snack!

Ingredients

  • 1 pound bread dough
  • 1/2-3/4 pound linguica sausage

How To Make linguica bread

  • Step 1
    Cut raw bread into 8 parts.
  • Step 2
    Remove skin from linguica and fry meat, breaking up meat, till half cooked.
  • Step 3
    Refrigerate dough and meat one hour.
  • Step 4
    Flatten dough like a pancake and fill with meat.
  • Step 5
    Seal like a roll.
  • Step 6
    Let rise 1 1/2 hours.
  • Step 7
    Bake at 375° until dough is brown and crispy, about 15 minutes.
