    pineapple juice
  • 1/2 c
    brown sugar, firmly packed
  • 2 tsp
    fresh ginger root, minced
  • 2 tsp
    lemon rind, grated

    lamb chops, 1 inch thick

How To Make lemon-ginger lamb chops

    Combine the pineapple juice and the next 4 ingredients in a small saucepan. Cook over medium heat until the sugar dissolves, stirring occasionally.

    Place lamb chops on a rack in a roasting pan; brush with the pineapple juice mixture.

    Broil 6 inches from the heat 5 to 7 minutes on each side or to desired doneness, basting frequently with the pineapple juice mixture.
