Love my spaghetti squash, so when I finally found one at the market, had to make this! Had a little meat sauce left, but You can certainly make this vegetarian with a marinara sauce. Its a guilt free, low carb way to enjoy lasagna, or pizza!!!
1Cut spaghetti squash in half and clean and discard seeds.
Place on baking sheet, drizzle with olive oil and S&P. Turn upside down, skin side up.
Place in 400 preheated oven for 40min.
2Mix ricotta with italian seasoning and parmesan cheese.
When done scrap your squash so its like spaghetti.
Start your layering on top of spaghetti. First sauce then ricotta, more sauce and top with slice and a half of mozzarella and pepperoni.
3Put under broiler for a few minutes till cheese is melted and bubbly.
Add any of your favorite pizza toppings. Or if making vegetarian add veggies on top!
