Ingredients

  • 4 / 5 pounds lamb shoulder roast
  • 3 tablespoons all purpose flour
  • 1 tablespoon dry mustard
  • 1/2 teaspoon salt
  • 1 cup currant jelly
  • 1/4 teaspoon pepper
  • 1/2 cup cold water

How To Make lamb shoulder roll

  • Step 1
    have roast boned and rolled. Place on rack in open roasting pan.
  • Step 2
    Mix flour, mustard, salt, and pepper; blend in cold water. Spread over meat. Insert meat thermometer Roast in 325 F oven for 3 1/2 to 4 hours or until internal temp of 170 F.
  • Step 3
    Spread with jelly the last hour, baste every 15 minutes. Sprinkle with parsley if desired
