Ingredients
- 4 / 5 pounds lamb shoulder roast
- 3 tablespoons all purpose flour
- 1 tablespoon dry mustard
- 1/2 teaspoon salt
- 1 cup currant jelly
- 1/4 teaspoon pepper
- 1/2 cup cold water
How To Make lamb shoulder roll

Step 1have roast boned and rolled. Place on rack in open roasting pan.

Step 2Mix flour, mustard, salt, and pepper; blend in cold water. Spread over meat. Insert meat thermometer Roast in 325 F oven for 3 1/2 to 4 hours or until internal temp of 170 F.

Step 3Spread with jelly the last hour, baste every 15 minutes. Sprinkle with parsley if desired
