lamb chops with anchovy butter
This butter is so sumptuous. I have made this with tuna steaks also. Follow the same recipe except sear the tuna for about 3 minutes per side depending on how thick the tuna is

Ingredients
- ANCHOVY BUTTER
- 1 stick butter softened
- 2 tablespoons shallot finely chopped
- 2 cloves garlic minced
- 8 anchovy filets drained dried and finely chopped
- 2 tablespoons finely chopped mint
- 1 1/2 teaspoons lemon juice
- salt to taste
- LAMB CHOPS
- 16 small lamb chops
- 1/4 cup olive oil
- 6 cups garlic minced
- 1 lemon cut into slices
- salt and pepper
- 4 sprigs mint
How To Make lamb chops with anchovy butter

Step 1Mix the butter with all the ingredients for the anchovy butter. When all is incorporated well place on wax paper and roll into a log. Place in the fridge to harden up

Step 2In a large Ziploc bag add the olive oil. garlic, lemon slices, salt, pepper and mint sprigs. Add the lamb chops and marinate in the fridge for 2 hours then remove and let sit at room temp for 1 hour.

Step 3Remove the lamb chops from the marinade and brush away the marinade. Heat a cast iron pan until hot. Add the lamb chops in batches if needed and sear about 5 minutes per side.

Step 4Remove the butter from the fridge and cut into 16 pieces. Place a piece of butter onto each lamb chop. Serve
