Ingredients

  • 9 ounces glass noodles
  • 2 tablespoons sesame oil
  • 4 cloves garlic minced
  • 1 inch piece of ginger grated
  • 2 carrots cut into matchsticks
  • 1 bunch baby bok choy chopped
  • 4 green onions chopped
  • 1/4 cup soy sauce
  • 2 tablespoons each mirin and brown sugar

How To Make korean glass noodle vegetable stir fry

  • Step 1
    Cook the glass noodles according to package directions. Drain and cut up with kitchen shears to make them easier to eat. Set aside.
  • Step 2
    Add sesame oil to pan and add the garlic, ginger, carrots and bok choy. Stir fry for 2 minutes. Add the green onions and noodles into the pan and stir fry 2 more minutes.
  • Step 3
    Mix the soy sauce, mirin and brown sugar together and pour over the noodles and veggies and cook about 3 minutes. serve
