Korean Black Bean Noodles are called Jajangmyeon. I don't know how to pronounce it, but it tastes wonderful. It is packed with veggies, noodles, and pork.

Ingredients

  • 2 tablespoons flax seed oil
  • 1 medium onion, chopped
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1 cup cabbage, sliced
  • 1 small russet potato, peeled and diced
  • 4 slices bacon, cooked and sliced
  • 1/2 dash black bean paste
  • 2 cups chicken stock or water
  • 2 tablespoons oyster sauce
  • 4 tablespoons brown sugar
  • 8 ounces Jajangmyeon noodles or any thick noodles
  • 2 tablespoons potato starch
  • 2 tablespoons water

How To Make korean black bean noodles

  • Step 1
    Add the oil to a large pan. Add the onion, mushrooms, garlic, potatoes, and cabbage. Saute until the veggies are softened.
  • Step 2
    Make a well in the middle of the pan and add the bean paste. Saute 2 minutes. Add the chicken stock and potatoes. Bring to a boil.
  • Step 3
    Add the oyster sauce and brown sugar. Cook until the potatoes are fork-tender. Stir in the bacon.
  • Step 4
    Cook the noodles according to package directions. Drain and run under cool water.
  • Step 5
    Mix the potato starch and water, and pour them into the pan.
  • Step 6
    Place noodles in a bowl. Add the sauce over the top, and enjoy.
