kevins black bean taco's

This is a meatless taco, but trust me you are going to want to cook this all the time. My son Kevin does not eat beef or pork so he makes this.

Ingredients

  • 1 - 16 ounce can of black beans
  • 1/2 teaspoon cumin
  • 5 teaspoons olive oil
  • 1 tablespoon fresh lime juice
  • 2 cups cole slaw mix
  • 2 - green onions chopped
  • 1/3 cup chop cilantro
  • 4 - corn tortillas (fried) or baked
  • 1/3 cup feta cheese
  • - chipotle or hot sauce to taste

How To Make kevins black bean taco's

  • Step 1
    Put black beans in small bowl,add cumin and partially mash. Set aside.
  • Step 2
    In medium bowl add slaw,olive oil,green onions and cilantro,and lime juice toss to coat. Season with salt and pepper. Set aside.

    Fry tortillas in olive oil fold in half with tongs while cooking. Cook long enough to make semi-har
  • Step 4
    Open taco shell and add 1/4 teaspoon black bean mixture. Then add all other ingredients,cheese and enjoy!!!!
