Ingredients
- 2 tablespoons olive oil, extra virgin
- 1 pound ground chuck
- 1 tablespoon minced onion seasoning
- 1 teaspoon minced garlic seasoning
- salt and pepper
- 2 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 medium yellow onions, sliced
- 2 medium tomatoes
- 1 cup mozzarella cheese
- 1/4 cup Parmesan cheese
- 1 teaspoon Italian seasoning

Step 1Using medium-high heat, brown ground chuck in a large skillet. When cooked through, add salt, pepper, minced onion, and garlic, continuing to cook one more minute; transfer to a bowl.

Step 2To the same skillet, add 2 Tbsp olive oil, sliced zucchini, and squash. Stir fry until veggies start to brown. Add sliced onions and continue to stir-fry until zucchini is fork tender. Remove from heat.

Step 3Add ground chuck to the veggies; mix to combine. Top with large dice tomatoes, then sprinkle shredded mozzarella, Parmesan, and Italian seasoning over the top.

Step 4Pop in the oven set to broil for two minutes, or until bubbly and starting to brown. Enjoy!
