Ingredients
- 1 cup polenta
- 3 cups chicken stock
- 1 teaspoon salt
- 3/4 cup parmesan cheese
- 4 ounces baby spinach
- 1 tablespoon malt vinegar
- 1 tablespoon olive oil
- 1 cup fresh mushrooms
- 3 cloves garlic minced
- 1 jar spaghetti sauce
- 8 ounces fresh mozzarella sliced
- 1/4 cup fresh basil chopped
How To Make italian cheesy polenta with mozzarella and spinach

Step 1Bring the chicken stock and salt to a boil. Add the Polenta and cook until thick. Stir in the Parmesan cheese and set aside.

Step 2Sprinkle the spinach with the Malt vinegar and set aside. Place oil in a saute pan and add the mushrooms. cook 5 minutes stir in the garlic and cook 1 more minute

Step 3Warm the spaghetti sauce.

Step 4When ready to serve. Place Polenta in middle of dish. Surrounded by spinach leaves. Top with mushrooms then Top with Spaghetti sauce and Mozzarella slices and basil.

Step 5MIcrowave until the cheese has melted slightly.
