Ingredients

  • 1 cup polenta
  • 3 cups chicken stock
  • 1 teaspoon salt
  • 3/4 cup parmesan cheese
  • 4 ounces baby spinach
  • 1 tablespoon malt vinegar
  • 1 tablespoon olive oil
  • 1 cup fresh mushrooms
  • 3 cloves garlic minced
  • 1 jar spaghetti sauce
  • 8 ounces fresh mozzarella sliced
  • 1/4 cup fresh basil chopped

How To Make italian cheesy polenta with mozzarella and spinach

  • Step 1
    Bring the chicken stock and salt to a boil. Add the Polenta and cook until thick. Stir in the Parmesan cheese and set aside.
  • Step 2
    Sprinkle the spinach with the Malt vinegar and set aside. Place oil in a saute pan and add the mushrooms. cook 5 minutes stir in the garlic and cook 1 more minute
  • Step 3
    Warm the spaghetti sauce.
  • Step 4
    When ready to serve. Place Polenta in middle of dish. Surrounded by spinach leaves. Top with mushrooms then Top with Spaghetti sauce and Mozzarella slices and basil.
  • Step 5
    MIcrowave until the cheese has melted slightly.
