Ingredients
- 1 head cauliflower cut into florets
- salt and pepper
- melted ghee
- 1 small yellow onion chopped
- 1 inch ginger grated
- 4 cloves garlic minced
- 1 tablespoon garam masala
- 2 teaspoons madras curry powder or any yellow curry powder
- 1/2 teaspoon each turmeric & cayenne pepper
- 3 tablespoons brown sugar
- 6 ounces can tomato paste
- 2 cups heavy cream
- fresh cilantro chopped
- basmati rice & naan for serving
How To Make indian butter cauliflower

Step 1Preheat a broiler to high. Line a baking sheet with foil. Spread out the cauliflower on sheet. Drizzle with Ghee and season with salt and pepper. Place in broiler for about 5 minutes just until they start to char. Remove from oven and set aside.

Step 2In a large skillet add some ghee and add the onion, garlic and ginger and cook until onion is softened. Add the spices and brown sugar. Stir to combine. Add the tomato paste and heavy cream. Bring to a boil and reduce to simmer. Simmer 5 minutes. Add the cauliflower and stir in 1 tbsp. of ghee

Step 3Serve over rice with naan and garnish with cilantro
