I created a first-ever catfish recipe. It's oven-fried and filled with honey mustard. It's great on po-boy sandwiches.

Ingredients

  • 2 cups buttermilk
  • 3/4 cup honey mustard
  • 2/3 cup yellow cornmeal
  • 1 cup Panko bread crumbs
  • 1 tablespoon garlic pepper
  • 2 teaspoons sea salt
  • 3 1/2 teaspoons Old Bay seasoning
  • 1 teaspoon ground cumin
  • 3/4 cup shredded Parmesan cheese
  • 1 pound catfish fillets, cut into smaller pieces

How To Make honey mustard oven-fried catfish

  • Step 1
Preheat oven to 400 degrees F.
  • Step 2
Line a baking sheet with parchment paper and mist with nonstick cooking spray.
  • Step 3
In a large bowl, combine buttermilk and honey mustard; whisk together until blended.
  • Step 4
In a deep pie plate, combine yellow cornmeal, bread crumbs, garlic pepper, sea salt, Old Bay seasoning, ground cumin, and Parmesan cheese; mix well with a fork until combined.
  • Step 5
Dredge each fillet in honey mustard mixture; dip on both sides. Transfer a fillet into crumb mixture to coat.
  • Step 6
Place a fillet on the coated baking sheet. Repeat with each fillet.
  • Step 7
Bake for 25 minutes or until the fillets are golden brown.
