I just had a craving for fried bologna and came up with these about 6 years ago!

Ingredients
- 1 medium 6" submarine sandwich rolls
- 1 tablespoon mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon olive oil, extra virgin (evoo)
- 1/4 pound deli bologna, chipped
- 1 sprig yellow onions
- 2 slices american cheese
- 1/2 cup crushed, plain potato chips
How To Make hillbilly "philly" cheesesteak sandwiches

Step 1Slice the sub rolls if needed. Add the mayo to both sides. Add the mustard to the mayo. Set aside

Step 2Add EVOO to a hot skillet, prefer cast iron. Add onion. Saute until onion starts to turn clear. Add the chipped bologna. toss till bologna starts to brown. don't let it get too dark/burnt. remove from heat and add cheese over bologna.

Step 3transfer bologna/onion/cheese to roll. top with crushed chips. serve
