I just had a craving for fried bologna and came up with these about 6 years ago!

Ingredients

  • 1 medium
    6" submarine sandwich rolls
  • 1 Tbsp
    mayonnaise
  • 1 Tbsp
    yellow mustard
  • 1 tsp
    olive oil, extra virgin (evoo)
  • 1/4 lb
    deli bologna, chipped
  • 1 sprig(s)
    yellow onions
  • 2 slice
    american cheese
  • 1/2 c
    crushed, plain potato chips

How to Make Hillbilly "Philly" Cheesesteak Sandwiches

Step-by-Step

  1. Slice the sub rolls if needed. Add the mayo to both sides. Add the mustard to the mayo. Set aside
  2. Add EVOO to a hot skillet, prefer cast iron. Add onion. Saute until onion starts to turn clear. Add the chipped bologna. toss till bologna starts to brown. don't let it get too dark/burnt. remove from heat and add cheese over bologna.
  3. transfer bologna/onion/cheese to roll. top with crushed chips. serve
