hillbilly "philly" cheesesteak sandwiches

I just had a craving for fried bologna and came up with these about 6 years ago!

Ingredients

  • 1 medium 6" submarine sandwich rolls
  • 1 tablespoon mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon olive oil, extra virgin (evoo)
  • 1/4 pound deli bologna, chipped
  • 1 sprig yellow onions
  • 2 slices american cheese
  • 1/2 cup crushed, plain potato chips

How To Make hillbilly "philly" cheesesteak sandwiches

  • Step 1
    Slice the sub rolls if needed. Add the mayo to both sides. Add the mustard to the mayo. Set aside
  • Step 2
    Add EVOO to a hot skillet, prefer cast iron. Add onion. Saute until onion starts to turn clear. Add the chipped bologna. toss till bologna starts to brown. don't let it get too dark/burnt. remove from heat and add cheese over bologna.
  • Step 3
    transfer bologna/onion/cheese to roll. top with crushed chips. serve
