I just had a craving for fried bologna and came up with these about 6 years ago!

Ingredients For hillbilly "philly" cheesesteak sandwiches

  • 1 md
    6" submarine sandwich rolls
  • 1 Tbsp
    mayonnaise
  • 1 Tbsp
    yellow mustard
  • 1 tsp
    olive oil, extra virgin (evoo)
  • 1/4 lb
    deli bologna, chipped
  • 1 sprig
    yellow onions
  • 2 slice
    american cheese
  • 1/2 c
    crushed, plain potato chips

How To Make hillbilly "philly" cheesesteak sandwiches

    Slice the sub rolls if needed. Add the mayo to both sides. Add the mustard to the mayo. Set aside

    Add EVOO to a hot skillet, prefer cast iron. Add onion. Saute until onion starts to turn clear. Add the chipped bologna. toss till bologna starts to brown. don't let it get too dark/burnt. remove from heat and add cheese over bologna.

    transfer bologna/onion/cheese to roll. top with crushed chips. serve
