ham broccoli rice and cheese casserole

Made this for my kids last week and they killed it! The corn is an opptional ingredient in case you don't like it. Enjoy!

Ingredients

  • 1 - onion, chopped
  • 1 tablespoon olive oil, extra virgin
  • 3 cups rice, cooked (instant)
  • 2 cups ham, cooked & diced ( i use pre-packaged)
  • 3 cups broccoli flortets, steamed ( i use frozen, steam in bag kind)
  • 10 ounces corn
  • 1/2 cup milk
  • 20 ounces cream of mushroom soup
  • 2 cups cheddar cheese, shredded
  • 1/2 cup breadcrumbs
  • 1/2 cup parmesan cheese
  • 1/4 cup butter or margarine, melted
  • 1 dash salt
  • 1 dash pepper
  • 1 dash garlic salt

How To Make ham broccoli rice and cheese casserole

  • Step 1
    Preheat oven to 375. Cook rice as instructed, and steam broccoli
  • Step 2
    Cook onions in oil over medium-low heat until soft.
  • Step 3
    In a large bowl, mix the milk, soup, seasonings and cheddar cheese until combined. Gently stir in cooked rice, broccoli, corn, and onions.
  • Step 4
    Dump broccoli mixture into a large casserole dish. In a small bowl, combine the melted butter, breadcrumbs, and parmesean cheese.
  • Step 5
    Spread breadcrumb mixture over the top of the casserole and bake uncovered for 30-35 minutes
