Ingredients

  • 3 tablespoons vegetable oil
  • 3 pounds beef chuck roast, cut into 1" pieces
  • 2 medium onions, chopped
  • 2 stalks celery, chopped
  • 3 tablespoons all purpose flour
  • 1 tablespoon minced garlic
  • 1 tablespoon tomato paste
  • 2 teaspoons chopped fresh thyme
  • 1-1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bottle guinness stout beer (11 oz.)
  • 1 cup beef broth, reduced sodium
  • 3 - carrots, peeled and cut into 1" chunks
  • 4 small turnips (3/4 lb.), peeled and cut into 1" pieces
  • 4 medium yukon gold potatoes (1 lb.), peeled and cut into 1" pieces
  • 1/4 cup chopped fresh parsley

How To Make guinness beef stew

  • Step 1
    Preheat oven to 350ºF. Heat 2 Tablespoons oil in Dutch oven over medium-high heat until almost smoking. Add beef in two batches; cook about 10 minutes per batch or until browned on all sides. Remove beef to a large bowl.
  • Step 2
    Add remaining 1 Tablespoon oil to Dutch oven; heat over medium heat. Add onions and celery; cook about 10 minutes or until onions are softened and translucent. Add flour, garlic, tomato paste, thyme, salt and pepper; cook and stir 1 minute. Add Guinness beer; use wooden spoon to scrape up browned bit from bottom of Dutch oven. Return beef to pan; stir in broth.
  • Step 3
    Cover and bake 1 hour. Stir in carrots, turnips and potatoes; cover and bake about 1 hour 20 minutes or until beef and vegetables are tender. Stir in parsley.
