Ingredients
- SUSHI RICE
- 2 cups sushi rice
- 1/2 cup rice vinegar
- 2 tablespoons mirin
- 1/4 cup sugar
- SOY GINGER GLAZE
- 1/2 cup soy sauce
- juice and zest of 1 orange
- 2 tablespoons brown sugar
- 1/2 tablespoon grated ginger
- FOR THE DISH
- pickled ginger
- julienned carrots
- cilantro leaves
How To Make grilled sushi rice with soy ginger glaze

Step 1Glaze Mix the ingredients for the glaze together and set aside in fridge until ready to use.

Step 2Cook the Sushi rice according to package direction. You can use a rice cooker or stove top.

Step 3While the rice is cooking mix the vinegar, mirin and sugar together in a saucepan. Cook without boiling until sugar is dissolved. Keep warm

Step 4Invert the rice into a stainless steel or wooden bowl.Fold in half the vinegar mixture into the rice. Taste and add more vinegar mixture if desired. Dampen a clean dish towel and gently mound the rice into a ball and lay the damp cloth over it and let sit 20 minutes to develope its flavor

Step 5Heat up a grill or add oil to a frying pan. With wet hands form the rice into 50 cent size medalions about a couple inches thick. WIth your finger make a shallow hole though one side of the rice medalions and place a piece of pickled ginger in the hole then enclose the rice over it

Step 6Place on the grill or fry until browned on both sides. About 4 minutes each side. Drizzle with the soy ginger glaze and top with carrots and cilantro. Serve
