Ingredients
- 1 cup cooked barley
- 1 bunch broccolini
- 1 - 14.5 oz can garbanzo beans drained 1/4 cup liquid reserved
- 1 cup fresh baby spinach
- 1 medium onion sliced
- 4 cloves garlic minced
- 1 large avocado sliced thin
- 1 cup shelled edamame thawed
- 8 cups fresh mushrooms
- 1/2 cup shelled pitashios
- - salt and pepper
- - olive oil
- GREEN GODDESS DRESSING
- 1 large avocado
- 1 cup parsley
- 1/2 cup basil
- 2 tablespoons chives
- - juice of 1 small lemon
- 3 cloves garlic
- 2 teaspoons each capers and dijon mustard
- 1/4 cup water
- 1/4 cup reserved garbanzo beans brine
- - salt and pepper
How To Make green goddess buddha bowl/plate

Step 1Make the Dressing by putting all ingredients into a food processor and process until well mixed. Place in fridge.

Step 2Preheat oven to 250 degrees Get out a sheet pan. Cook the barley according to package directions. While the barley is cooking. Add some oil to a large skillet. Saute the broccolini until softened and bright green seasoning with salt. Place the broccolini on the baking sheet and place in oven to keep warm.

Step 3Add a little more oil to skillet and add the onion and saute until translucent. Add the garlic and saute 1 minute. Place on sheet.

Step 4Wipe out the skillet add more oil and saute the mushroom until browned. Place on the baking sheet. Place the garbanzo beans and spinach in the skillet and cook until the spinach is wilted.

Step 5Cook the edamame in boiling salted water until warm. Drain.

Step 6To assemble the plate place each ingredient on the plate separately. Top with pistashios. Top with dressing.
