Ingredients

  • 2 cups water
  • 2 cups rice, instant and uncooked
  • 1 tablespoon unsalted butter
  • 1 1/2 cups monterey jack cheese
  • 1 1/2 cups sour cream
  • 2 cans 4 ounce each,diced green chilis {ortega}
  • 1 cup longhorn chedder cheese

How To Make green chili rice casserole

  • Step 1
    Add butter to water and bring to a boil,stir in the rice,COVER allow to sit for 8 minutes or until the rice cooked
  • Step 2
    In a large bowl,add jack cheese,hot rice,1 cup of sour cream and the green chilis
  • Step 3
    Add the rest sour cream on top after putting into a oblong casserole dish Grate the Longhorn cheese and sprinkle over the top
  • Step 4
    Cover tightly with foil and bake in a preheated oven at 300 degrees for one hour
  • Step 5
    You don't need the extra sour cream on top if you don't want the extra.It is OPTIONAL.
  • Step 6
    I sometimes use leftover brown rice or Basmatti,rather than the instant one.
