Ingredients

  • 2 c
    water
  • 2 c
    rice, instant and uncooked
  • 1 Tbsp
    unsalted butter
  • 1 1/2 c
    monterey jack cheese
  • 1 1/2 c
    sour cream
  • 2 can(s)
    4 ounce each,diced green chilis {ortega}
  • 1 c
    longhorn chedder cheese

How to Make Green Chili Rice Casserole

Step-by-Step

  1. Add butter to water and bring to a boil,stir in the rice,COVER allow to sit for 8 minutes or until the rice cooked
  2. In a large bowl,add jack cheese,hot rice,1 cup of sour cream and the green chilis
  3. Add the rest sour cream on top after putting into a oblong casserole dish
    Grate the Longhorn cheese and sprinkle over the top
  4. Cover tightly with foil and bake in a preheated oven at 300 degrees for one hour
  5. You don't need the extra sour cream on top if you don't want the extra.It is OPTIONAL.
  6. I sometimes use leftover brown rice or Basmatti,rather than the instant one.
