This is truly a GREAT dish, yet simple to prepare. A friend shared it with me after making me promise to only use fresh (real) parmesan.

Ingredients
- 2 - veal cutlets
- - salt and pepper
- 1/2 - fresh lemon juice
- 1 - large onion, sliced
- 4 tablespoons butter
- 3 - egg yolks
- 1/3 cup heavy whipping cream
- 4 ounces freshly grated parmesan cheese
How To Make great veal

Step 1Pound cutlets to tenderize

Step 2Sprinkle w/ salt & pepper to taste and the juice of half a lemon. Let stand one hour.

Step 3Saute onions in butter--add cutlets while butter is hot. Brown cutlets on both sides. Lower temperature, cover & cook for 30 minutes.

Step 4Mix together egg yolks, whipping cream and cheese.

Step 5Put cutlets on individual metal steak platters and pour egg mixture over them.

Step 6Place platters in the oven and broil until nicely browned and very hot.
