My rendition of my Grandpa’s stew he would make with the string beans grown in his garden

Ingredients

  • 1 1/2 tablespoons olive oil
  • 16 ounces sweet or mild italian sausage links
  • 1 medium yellow onion rough chopped
  • 2 large cloves of garlic rough chopped
  • 28 oz cans crushed tomatoes + 1 can of water
  • 28 oz cans diced tomatoes
  • 10 3/4 oz cans condensed tomato soup
  • 1 tablespoon sugar
  • 2 - bay leaves
  • 2 teaspoons italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 16 ounces pepperoni stick cut into 1/2“ slices
  • 4-5 medium russet potatoes peeled and diced into ¾” cubes
  • 1 1/2 pounds fresh string beans (green beans) cleaned and rinsed
  • - parmesan cheese, butter and italian bread for serving

How To Make grandpa‘s stew

  • Step 1
    Pour oil in large heavy bottom stock pot over medium heat
  • Step 2
    Cook sausage in pot, remove cut into 1/2" pieces and set aside
  • Step 3
    Add onions and cook translucent
  • Step 4
    Add garlic cook 1 minute more
  • Step 5
    Add crushed, diced tomatoes, condensed tomato soup, water, bay leaves, sugar and remaining dried seasoning. Mix Well
  • Step 6
    Stir in Sausage, Pepperoni, potatoes and string beans. Mix well and bring to a simmer
  • Step 7
    Lower heat and cover for three hours or longer
  • Step 8
    Remove and discard Bay leaves
  • Step 9
    Serve topped with parmesan cheese and buttered italian bread. Enjoy!
