Gourmet Grilled Cheese

Teressa Drenth

"Our family loves the "feel good" meal of grilled cheese and tomato soup, but I was looking for something a little more, shall we say, fancy? I came up with this recipe when I had some leftover dip mix still in the refrigerator and thought it might taste good between potato bread and toasted. After a couple of enhancements the Gourmet Grilled Cheese was born. Enjoy!"

Notes from the Test Kitchen:
It's fun to see how people can take a basic sandwich and make it into something extraordinary! The blend of cheeses is lovely in this grilled cheese. I really liked the chives in the sandwich. I chose to use Hawaiian bread and it was perfect. Make a batch of the cheese mix to keep in your fridge. Then you'll have a quick & easy sandwich!

4 oz
cream cheese
2/3 c
1 c
sharp cheddar cheese, shredded
1 c
grated parmesan cheese
1/2 c
chives, finely chopped
1/2 c
ham, finely chopped
1 clove
crushed garlic
1/2 tsp
lawry's season salt
16 slice
potato or hawaiian bread
butter for spreading

1Butter one side of each slice of bread
2Combine all remaining ingredients and spread filling between two buttered slices of bread, butter on the outside.
3Fry in pan over med to med hi heat until bread is golden brown and filling has melted.
4Remove from heat and immediately cut sandwich on the diagonal.
