I created this oven-baked barbecue chicken recipe, with some pinches of ginger. It is delicious.

Ingredients

  • 1 knob fresh ginger, peeled and sliced
  • 1 tablespoon creole seasoning
  • 3 pounds bone-in fresh chicken thighs
  • 4 tablespoons barbecue seasoning
  • 1 tablespoon black pepper
  • 1 teaspoon ground cumin
  • 4 teaspoons ground ginger, divided
  • 2 cups regular barbecue sauce
  • 3 tablespoons honey mustard
  • 2 tablespoons dark brown sugar

How To Make ginger oven baked barbecue chicken thighs

  • Step 1
    Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil. Coat with cooking spray.
  • Step 2
    Fill a large pot with water over medium heat. Add sliced ginger and season with creole seasoning. Stir together until combined.
  • Step 3
    Place chicken thighs in a pot with prepared boiling water and bring to a boil, about 5 minutes until the chicken thighs are no longer pink. Drain well.
  • Step 4
    Place chicken in a large bowl. Combine barbecue seasoning, black pepper, ground cumin, and 2 tablespoons ground ginger in a bowl; mix together until blended. Toss with the chicken.
  • Step 5
    Transfer onto a prepared baking sheet. Bake in preheated oven for 15 minutes.
  • Step 6
    In a medium bowl, combine barbecue sauce, honey mustard, brown sugar and remaining ground ginger; whisk well.
  • Step 7
    Take the chicken thighs out of the oven. Baste the sauce all over the chicken thighs. Return to the oven for 10 minutes.
