Ingredients

  • 6-8 medium potatoes, peeled and sliced
  • 1 pound sausage, cooked & drained
  • 8 ounces sour cream
  • 1/2 package onion soup mix
  • 1 can cream of mushroom soup
  • 2 teaspoons lemon juice
  • 2 teaspoons dijon mustard
  • 1 pound sauerkraut, rinsed & drained
  • 1 cup buttered bread crumbs

How To Make german potato casserole

  • Step 1
    Peel and slice potatoes. Boil in salted water until tender.
  • Step 2
    Cook sausage until no longer pink and crumbles easily.
  • Step 3
    Mix sour cream, soup mix, mushroom soup, lemon juice and mustard.
  • Step 4
    Heat sauerkraut in 2 tablespoons of sausage drippings. Add kraut to sourcream mixture and stir until well blended. Stir in cooked sausage.
  • Step 5
    In 9X13-inch baking dish arrange potato slices on bottom. Pour and spread sourcream/meat mixture. Top with bread crumbs.
  • Step 6
    Bake in preheated 350-degree oven for 20-25 minutes, until hot and bubbly.
