German Potato Casserole

This is a perfect dish to celebrate Octoberfest!

6-8 medium
potatoes, peeled and sliced
1 lb
sausage, cooked & drained
8 oz
sour cream
1/2 pkg
onion soup mix
1 can(s)
cream of mushroom soup
2 tsp
lemon juice
2 tsp
dijon mustard
1 lb
sauerkraut, rinsed & drained
1 c
buttered bread crumbs


1Peel and slice potatoes. Boil in salted water until tender.
2Cook sausage until no longer pink and crumbles easily.
3Mix sour cream, soup mix, mushroom soup, lemon juice and mustard.
4Heat sauerkraut in 2 tablespoons of sausage drippings. Add kraut to sourcream mixture and stir until well blended. Stir in cooked sausage.
5In 9X13-inch baking dish arrange potato slices on bottom. Pour and spread sourcream/meat mixture. Top with bread crumbs.
6Bake in preheated 350-degree oven for 20-25 minutes, until hot and bubbly.
