garlic meatloaf and sandwiches

This is a great meatloaf and especially good on sandwiches. It's a variation of the meatloaf my mother made at my parents' deli. I don't usually measure when I make this, so I'm estimating quantities. My parents made this specially for hot meatloaf sandwiches, served at lunch on Kaiser rolls or rye bread. You can add tomatoes, onion - either raw or caramelized, and/or coleslaw and mayo. I added the sauce to make this a main dish meatloaf if desired.

Ingredients

  • 1 pound ground beef - 80/20 is best
  • 1/2 pound ground pork
  • 1 1/2 cups seasoned croutons or stuffing mix
  • 1 - egg
  • 1 tablespoon worcesters sauce
  • 4-5 cloves garlic, crushed fine
  • 1/2 cup tomato sauce
  • 1/2 cup finely diced onion
  • - salt and pepper to taste for both the meatloaf and sauce
  • 1 cup tomato sauce
  • 1 clove garlic - crushed
  • 1 tablespoon sugar
  • 1 teaspoon italian seasoning
  • 1 can diced tomatoes - use amount needed, you may not want the whole can, or you can drain some of the liquid out.

How To Make garlic meatloaf and sandwiches

  • Step 1
    Combine first 9 ingredients (through salt & pepper). Shape into loaf in oven proof pan, mixing as little as possible so as to not over handle meat.
  • Step 2
    Cook at 350 degrees for about 40 minutes. Mix sauce ingredients (last 6 ingredients) and pour over loaf in pan.
  • Step 3
    Cook until done, about 30 minutes more.
