garlic meatloaf and sandwiches

This is a great meatloaf and especially good on sandwiches. It's a variation of the meatloaf my mother made at my parents' deli. I don't usually measure when I make this, so I'm estimating quantities. My parents made this specially for hot meatloaf sandwiches, served at lunch on Kaiser rolls or rye bread. You can add tomatoes, onion - either raw or caramelized, and/or coleslaw and mayo. I added the sauce to make this a main dish meatloaf if desired.

Ingredients
- 1 pound ground beef - 80/20 is best
- 1/2 pound ground pork
- 1 1/2 cups seasoned croutons or stuffing mix
- 1 - egg
- 1 tablespoon worcesters sauce
- 4-5 cloves garlic, crushed fine
- 1/2 cup tomato sauce
- 1/2 cup finely diced onion
- - salt and pepper to taste for both the meatloaf and sauce
- 1 cup tomato sauce
- 1 clove garlic - crushed
- 1 tablespoon sugar
- 1 teaspoon italian seasoning
- 1 can diced tomatoes - use amount needed, you may not want the whole can, or you can drain some of the liquid out.
How To Make garlic meatloaf and sandwiches

Step 1Combine first 9 ingredients (through salt & pepper). Shape into loaf in oven proof pan, mixing as little as possible so as to not over handle meat.

Step 2Cook at 350 degrees for about 40 minutes. Mix sauce ingredients (last 6 ingredients) and pour over loaf in pan.

Step 3Cook until done, about 30 minutes more.
