Make sure to lay flat and single layer with parchment paper between to freeze. I always keep some in the freezer

Ingredients

  • - eggplant, peeled and sliced
  • - seasoned flour
  • - egg wash
  • - vegetable oil

How To Make fried eggplant

  • Step 1
    peel eggplant and slice 1/8 to 1/2 inch thick
  • Step 2
    season flour with salt and pepper
  • Step 3
    crack eggs and season with salt, pepper, dried oregano, parsley and parmigiano cheese
  • Step 4
    whisk to combine
  • Step 5
    take peeled eggplant, dredge in flour and shake off excess
  • Step 6
    place in egg wash , wipe off excess on side of bowl
  • Step 7
    Fry in hot oil till golden
  • Step 8
    drain on paper towel
  • Step 9
    may be frozen and used later for salad, rollatini or parmigiano
