How to Make Fried Eggplant

Step-by-Step

  1. peel eggplant and slice 1/8 to 1/2 inch thick
  2. season flour with salt and pepper
  3. crack eggs and season with salt, pepper, dried oregano, parsley and parmigiano cheese
  4. whisk to combine
  5. take peeled eggplant, dredge in flour and shake off excess
  6. place in egg wash , wipe off excess on side of bowl
  7. Fry in hot oil till golden
  8. drain on paper towel
  9. may be frozen and used later for salad, rollatini or parmigiano
