eggplant, peeled and sliced
seasoned flour
egg wash
vegetable oil

How to Make Fried Eggplant


  • 1peel eggplant and slice 1/8 to 1/2 inch thick
  • 2season flour with salt and pepper
  • 3crack eggs and season with salt, pepper, dried oregano, parsley and parmigiano cheese
  • 4whisk to combine
  • 5take peeled eggplant, dredge in flour and shake off excess
  • 6place in egg wash , wipe off excess on side of bowl
  • 7Fry in hot oil till golden
  • 8drain on paper towel
  • 9may be frozen and used later for salad, rollatini or parmigiano
