- - eggplant, peeled and sliced
- - seasoned flour
- - egg wash
- - vegetable oil
How To Make fried eggplant

Step 1peel eggplant and slice 1/8 to 1/2 inch thick

Step 2season flour with salt and pepper

Step 3crack eggs and season with salt, pepper, dried oregano, parsley and parmigiano cheese

Step 4whisk to combine

Step 5take peeled eggplant, dredge in flour and shake off excess

Step 6place in egg wash , wipe off excess on side of bowl

Step 7Fry in hot oil till golden

Step 8drain on paper towel

Step 9may be frozen and used later for salad, rollatini or parmigiano
