  • 6
    cornish game hens
  • 2 tsp
  • 1/4 tsp
    white pepper
  • 1 tsp
    nutmeg - frsh ground if possible
  • 1 clove
    garlic minced
  • 1/2 c
    melted butter
  • 1 c
    orange juice

How to Make Fireman Bob's Rock Cornish Game Hens under Orange


  1. In a bowl, mix all ingredients and blend
    Place Hens in a 9 by 13 dish
    Pour mixture over Hens and cook covered
  2. Orange Sauce

    2 cups liquids drippings from pan if not 2 cups add enough orange juice to make the 2 cups
    2 tablespoons flour
    2 tablespoons butter
  3. Make a rue and then add the 2 cups drippings
    Bring to a boil then simmer for 10 minutes
    Sauce should be placed on the table so all can take what they want.
  4. cook at 350 degrees baste every 15 minutes

    cook for 1 1/2 hours and don't forget to baste.

    * COOKING TIME will be adjusted per the size of the Hens...
