Ingredients

  • 1 tablespoon olive oil
  • 4 ounces bacon or pancetta chopped
  • 1 medium shallot minced
  • 1 large carrot fine chopped
  • 1/2 cup white wine
  • 1 1/2 cups pearl farro
  • 3 cups water
  • 3 ounces soft goat cheese
  • 1 bunch lacinato kale stemmed and chopped into pieces
  • 2 tablespoons butter
  • 1/2 cup freshly grated Parmesan plus more for serving
  • salt

How To Make farro with bacon, goat cheese, kale and parmesan

  • Step 1
    Add the olive oil to a pan and cook the bacon or Pancetta until crisp and all the fat has been rendered. Ditch most of the grease but leave about 2 tbsp. Remove the bacon to a plate and set aside.
  • Step 2
    Add the shallots, and carrots to the oil and season with salt. Cook for 2 minutes then add the wine and left most evaporate. Add the farro and season with salt. Add the 3 cups of water and bring to a simmer then cover and cook until stirring occasionally until all the moisture is absorbed.
  • Step 3
    Stie in the kale and cook until wilted about 2 minutes. Stir in the butter, Goat cheese and Parmesan. Serve topped with the bacon and more Parmesan
