Ingredients
- 2 cups white rice cooked
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
- 1 pound boneless skinless chicken
- 3/4 pound andouille - casing removed - diced
- 1 medium onion - chopped
- 2 ribs celery chopped
- 1 medium green pepper chopped
- 1 bay leaf
- drops of hot sauce - as desired
- 2-3 tablespoons flour
- 14 ounces diced tomato in juice
- 14 ounces chicken stock
- 1 teaspoon cumin
- 1 teaspoon dark chili powder
- 1 teaspoon poultry seasoning
- 1 teaspoon worcestershire sauce
- 1 pound med shrimp
How To Make everything jambalaya

Step 1Cook rice according to package directions

Step 2Place a large deep skillet over med-high heat.

Step 3Cube chicken and place in hot oil and butter

Step 4Brown chicken (3 minutes)

Step 5Add sausage

Step 6Cook 2 minutes more

Step 7add onion, celery, pepper, bay leaf, hot sauce (optional)

Step 8Saute vegetables 5 min

Step 9Sprinkle flour over pan and cook 1-2 minutes more

Step 10Stir in tomato and broth and season with cumin, chili powder, poultry seasoning and worcestershire sauce.

Step 11Bring liquids to a boil and add shrimp

Step 12Simmer shrimp 5 minutes (until pink)

Step 13Remove the pot from the heat and place on trivet.

Step 14Ladle jambalaya into shallow bowls. Place a scoop of rice in the center of the bowl.
