Ingredients

  • 2 cups white rice cooked
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 pound boneless skinless chicken
  • 3/4 pound andouille - casing removed - diced
  • 1 medium onion - chopped
  • 2 ribs celery chopped
  • 1 medium green pepper chopped
  • 1 bay leaf
  • drops of hot sauce - as desired
  • 2-3 tablespoons flour
  • 14 ounces diced tomato in juice
  • 14 ounces chicken stock
  • 1 teaspoon cumin
  • 1 teaspoon dark chili powder
  • 1 teaspoon poultry seasoning
  • 1 teaspoon worcestershire sauce
  • 1 pound med shrimp

How To Make everything jambalaya

  • Step 1
    Cook rice according to package directions
  • Step 2
    Place a large deep skillet over med-high heat.
  • Step 3
    Cube chicken and place in hot oil and butter
  • Step 4
    Brown chicken (3 minutes)
  • Step 5
    Add sausage
  • Step 6
    Cook 2 minutes more
  • Step 7
    add onion, celery, pepper, bay leaf, hot sauce (optional)
  • Step 8
    Saute vegetables 5 min
  • Step 9
    Sprinkle flour over pan and cook 1-2 minutes more
  • Step 10
    Stir in tomato and broth and season with cumin, chili powder, poultry seasoning and worcestershire sauce.
  • Step 11
    Bring liquids to a boil and add shrimp
  • Step 12
    Simmer shrimp 5 minutes (until pink)
  • Step 13
    Remove the pot from the heat and place on trivet.
  • Step 14
    Ladle jambalaya into shallow bowls. Place a scoop of rice in the center of the bowl.
