eggplant mozzarella
I've never been much of a fan of eggplant, but this recipe has made a fan of me. It is easy to make and really delicious...and whether you serve it as an entree or as a side dish, (like anything with melted cheese on top), it always looks pretty.

Ingredients
- 1 eggplant
- 2 tablespoons minced garlic
- 1 tablespoon paprika
- 2 tablespoons fresh basil, chopped
- 1 tablespoon salt
- 2 teaspoons pepper
- 3 tablespoons olive oil
- 1 large tomato
- 1 cup mozzarella, shredded
How To Make eggplant mozzarella

Step 1Slice eggplant into 1" slices. For six servings, place six slices on parchment paper in baking pan.

Step 2In a bowl, mix together garlic, paprika, basil, salt and pepper, and olive oil. Mix well. Spread mixture on each eggplant slice.

Step 3Slice tomato. Place slice on each piece of eggplant. Sprinkle with salt.

Step 4Place handful (or whatever) of mozzarella on top of each slice.

Step 5Sprinkle a little basil on top too. Place in 400 degree oven, cook for 25 minutes.

Step 6I'm embarassed to say I forgot to take the final picture, taking it out of the oven. (We were hungry!) But believe me when I tell you they were beautiful, with the cheese all melty and browned on the top. Served with side of pasta with just butter, and a side salad with Italian dressing. It was FABulous.
