easy red beans & rice

I made this for my picky husband & daughter for fat tuesday & they loved it. Use the crock pot & it makes it so easy

Ingredients

  • 1 medium onion, chopped
  • 1/2 cup celery, chopped
  • 1 medium green pepper, chopped (optional)
  • 2 tablespoons olive oil, extra virgin
  • 1 can tomatoes, canned and chopped, with liquid
  • 2 cans kidney beans, canned, drained
  • 1 pound turkey smoked sausage, sliced
  • 1/2 tablespoon mrs dash seasoning
  • 3 to 4 dashes worcestershire sauce
  • - cayenne pepper to taste
  • 3 to 4 cups rice, cooked and hot ( i use minute rice)

How To Make easy red beans & rice

  • Step 1
    In a medium skillet, saute onions, celery & green peppers in olive oil until tender. Remove from skillet & place in the crock pot. Now place sliced sausage in skillet until lightly brown. This helps add flavor to the dish. Put this in the crock pot, too.
  • Step 2
    Add the remaining ingredients & cook on low 6 to 8 hours. If the beans appear dry you can add 1/2 cup of either vegetable or chicken stock for a thinner sauce. I add it to the start as my family likes it that way.
  • Step 3
    Fix rice according to package directions. Place cooked, hot rice in bowls then put the cooked beans over rice. Serve this with cornbread. You can make this on the stove if you are in a hurry & cook the beans until heated through about 15 mins.
  • Step 4
    You can add more spice to this but my family doesn't like food very spicy. Enjoy!
