I love potato soup! This is so easy to make and you can dress it up any way you like.

Ingredients
- 1 pound browned ground beef
- 1/2 chopped onion
- 3 cups milk
- 1 cup chicken broth
- 1 stick butter
- 2 tablespoons minced garlic
- 10 red potatoes (chopped small)
- 1 tablespoon flour
How To Make easy potato soup

Step 1Wash and chop all potatoes. I like to do bite size cubes. I don’t peel them, but you can if you choose! Put the potatoes in a stock pot and cover with water and a pinch of salt, bringing to a boil. Boil til fork tender and drain, set aside.

Step 2In another pot melt butter on med heat and sauté onion and garlic. Once the onions are softened, turn off heat and stir in flour, mixing well.

Step 3Brown ground beef in another skillet and dump on top of butter and onion mixture. Dump potatoes on top of that and pour milk and broth over all. Turn heat up to medium high. During this time I like to take a tater masher and mash up a good bit of everything.

Step 4Make sure to stir regularly so the milk doesn’t burn. Salt and pepper to taste. This is wonderful served with shredded cheddar and sour cream. Enjoy!,
