Easy crazy good Eggplant Parmesan. You just have to try it - its amazing! Very easy to make and this dish looks so pretty you dinner guest will believe your a superstar chef.

Ingredients

  • 2 lg eggplants
  • 1-2 cup bread crumb or panko
  • 1-2 cup spinach, fresh
  • 1/3 cup coconut flakes
  • 2-3 basil, fresh
  • 12 mozzarella balls fresh
  • 1/2 cup parmesan cheese
  • 2 eggs
  • 2-3 cups marinara sauce
  • 1-2 roma tomatoes

How To Make easy eggplant parmesan

  • Step 1
    Cut eggplant into slices lay on a flat sheet and throw a little bit salt on them and sweat them for 30 minutes.
  • Step 2
    Bread crumbs add salt and pepper garlic salt Parmesan cheese and coconut flakes set aside
  • Step 3
    Eggs scrambled and dip eggplant from egg to bread crumbs mix
  • Step 4
    Heat up skillet with coconut oil and lightly fry your Battered eggplant set on paper towel
  • Step 5
    Place fried eggplant in baking dish layer with fresh spinach , thin sliced Roma tomatoes, mozzarella balls and cut sweet fresh basil into strip place on top Put into heated oven heat up just enough until the mozzarella melts 6-9 min oven 400f Serve over marinara heated sauce.
