dirty hash
I like regular ole left over meat and potato hash, he doesn't. We like traditional dirty rice with the beans and the spices, Mom doesn't. I had left over prime rib and was craving hash. Standing there waiting for inspiration to hit and bam it did. I replaced the potatoes with rice, changed up the spices to be a little more zippy and used all the other ingredients I would use in a traditional hash. This dish is different and tasty. Mom loved it and Hubby had 3rds. I didn't put this in the recipe but I did add the onion and garlic I had roasted with the meat. I needed to use it up.

Ingredients
- 1/2 cup jasmine rice
- 3/4 cup beef broth or water
- 1 small onion finely chopped
- 1 large carrot finely chopped
- 6 to 8 - baby portabella mushrooms sliced thin and cut in half
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 teaspoon curry powder
- 1 cup left over prime rib cut into bite size pieces. give or take on the amount
- 4 to 5 medium small to medium italian tomatoes cut into quarters
- 1 large patty of butter
How To Make dirty hash

Step 1In small sauce pan add rice and broth or water. Bring to a boil and lower heat, simmer till liquid is absorbed , remove from heat and set a side.

Step 2In a skillet heat 2 tbsp off oil, add onion and carrot, cook until carrots are tender, and onions are translucent .

Step 3stir in garlic, curry, and ginger.

Step 4Add Mushrooms and meat. Cook on med high heat until meat is lightly browned, stirring often.

Step 5Add the rice to the meat mixture. Over low heat mix in the tomatoes and butter, continue to cook until all the butter is melted, give a few gentle tosses until the tomato is mixed in.

Step 6Serve on a bed of lettuce.
