deluxe macaroni & cheese

I got this recipe from Taste of Home website; and have used it many times. ALL of my friends and family LOVE it. Continually being asked for the recipe! For a low fat version, just make it with non or low fat products and use whole wheat pasta! For a more hearty main dish, add a pound of smoked sausage or diced ham.

Ingredients

  • 2 cups 4% cottage cheese
  • 1 cup (8 ounces) sour cream
  • 1 - egg, lightly beaten
  • 3/4 teaspoon salt
  • - garlic powder, to taste
  • - ground pepper, to taste
  • 2 cups sharp cheddar cheese, shredded or grated
  • 1 package (7 ounces) elbow macaroni, cooked and drained
  • - sprinkle paprika (optional)

How To Make deluxe macaroni & cheese

  • Step 1
    In a large bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add cheddar cheese; mix well. Add cooked macaroni and stir until coated.
  • Step 2
    Transfer to a greased 2 1/2 quart baking dish. Sprinkle with paprika if desired. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 8-10 servings.
