Ingredients

  • 2 tablespoons canola oil
  • 2 cloves garlic, minced
  • 1 - onion, finely chopped
  • 2 teaspoons finely grated fresh ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 3/4 teaspoon allspice, ground
  • 3 - tomatoes,peeled,seeded,and coarsely chopped
  • 1/2 teaspoon minced habanero chile
  • 1 teaspoon thyme
  • - salt & freshly ground pepper
  • 2 cups unsweetened coconut milk
  • 1 cup water
  • 2 pounds lump crabmeat
  • 3/4 cup chopped cilantro
  • - grilled naan and hot sauce for serving

How To Make curry crab

  • Step 1
    IN A DEEP, MEDIUM SKILLET,HEAT THE OIL. ADD THE ONION AND COOK OVER MODERATE HEAT,STIRRING OCCASIONALLY,UNTIL SOFTENED,ABOUT 5 MIN.
  • Step 2
    ADD THE GARLIC AND GINGER AND COOK,STIRRING ABOUT 2 MIN.
  • Step 3
    STIR IN THE CURRY POWDER, TURMERIC AND ALLSPICE AND COOK FOR 2 MORE MIN.
  • Step 4
    ADD THE TOMATOES, HABANERO CHILE AND THYME, SEASON WITH SALT & PEPPER. COOK STIRRING OCCASIONALLY, UNTIL TOMATOES ARE JUST BEGINNING TO SOFTEN ABOUT 2 MIN.
  • Step 5
    ADD THE COCONUT MILK AND WATER AND BRING TO A BOIL.
  • Step 6
    SIMMER OVER LOW HEAT, STIRRING OCCASIONALLY, UNTIL THE SAUCE IS REDUCED BY 1/3, ABOUT 15 MIN.
  • Step 7
    STIR IN THE CRAB MEAT AND COOK JUST UNTIL HEATED THROUGH, STIR IN THE CILANTRO,
  • Step 8
    SERVE WITH GRILLED NAAN AND HOT SAUCE
