Alrighty then…tonight a fairly easy meal. Especially so tonight because I used a box mix for the cornbread. I do have a decent cornbread from scratch recipe but I was in a hurry today. I have been on a mission to get the richness of Louisiana beans in my pintos. I think I have gotten it with this recipe!

prep time 20 Min
cook time 12 Hr
method ---
yield 6-8 serving(s)

Ingredients

  • 1 quart chicken broth
  • 3 cups dried pinto beans
  • 1 - small onion, diced
  • 2 tablespoons creole seasoning
  • 1 - ham hock, smoked

How To Make crockpot pinto beans

  • Step 1
    Wash and sort pinto beans.
  • Step 2
Put all ingredients into the crockpot and cook on low for at least 12 hours. You may need to add water or more broth about halfway through. i usually start these the night before I want to eat them and then check the water in the morning. By the time I get home they are perfect!
  • Step 3
I serve these over cornbread and topped with a little monterey jack. DEEEElish!
