Alrighty then…tonight a fairly easy meal. Especially so tonight because I used a box mix for the cornbread. I do have a decent cornbread from scratch recipe but I was in a hurry today.

I have been on a mission to get the richness of Louisiana beans in my pintos. I think I have gotten it with this recipe!

Ingredients

chicken broth
3 c
dried pinto beans
1
small onion, diced
2 Tbsp
creole seasoning
1
ham hock, smoked

How to Make Crockpot Pinto Beans

Step-by-Step

  • 1Wash and sort pinto beans.
  • 2Put all ingredients into the crockpot and cook on low for at least 12 hours. You may need to add water or more broth about halfway through. i usually start these the night before I want to eat them and then check the water in the morning. By the time I get home they are perfect!
  • 3I serve these over cornbread and topped with a little monterey jack. DEEEElish!
