This is something my dad would make right after Christmas, I don't know why, but he always did. And it was delicious!!

Ingredients For creamy tomato-bacon quiche

1/4 creal bacon bits

1unbaked 9"-deep diesh pie shell

3 lgeggs
-
18 oz pkg reduced-fat cream cheese, softened

1green onion, chopped
-
1/2 clite sour cream
-
1/4 tspsalt
-
1/4 tspwhite pepper
-
1 lgripe tomato, cut into thin wedges
How To Make creamy tomato-bacon quiche

1Heat oven to 400. Spray a 9" deep dish pie pan w/ cooking spray. Place pie shell in pan. Sprinkle bacon bits evenly onto bottom of pie shell

2In bowl, beat eggs. Beat in cream cheese until smooth. Add remaining ingredients, except for tomatoes. Beat until combined.

3Pour mix over bacon bits. Arrange tomatoes on top, in a pinwheel pattern. Bake 20 mins. Reduce heat to 350. Bake another 15-20 min, or until set. Cut into wedges. Serve hot.
