This is something my dad would make right after Christmas, I don't know why, but he always did. And it was delicious!!

Ingredients

1/4 c
real bacon bits
1
unbaked 9"-deep diesh pie shell
3 large
eggs
1
8 oz pkg reduced-fat cream cheese, softened
1
green onion, chopped
1/2 c
lite sour cream
1/4 tsp
salt
1/4 tsp
white pepper
1 large
ripe tomato, cut into thin wedges

How to Make Creamy tomato-bacon quiche

Step-by-Step

  • 1Heat oven to 400. Spray a 9" deep dish pie pan w/ cooking spray. Place pie shell in pan. Sprinkle bacon bits evenly onto bottom of pie shell
  • 2In bowl, beat eggs. Beat in cream cheese until smooth. Add remaining ingredients, except for tomatoes. Beat until combined.
  • 3Pour mix over bacon bits. Arrange tomatoes on top, in a pinwheel pattern. Bake 20 mins. Reduce heat to 350. Bake another 15-20 min, or until set. Cut into wedges. Serve hot.
