Crab Cakes

1 lb
fresh crabmeat
1 c
crushed saltine crackers
1/2 c
mayo with olive oil
1 Tbsp
yellow mustard
1 Tbsp
djon mustard
1 large
1 Tbsp
worcestershire sauce
1 tsp
old bay seasoning
1 dash(es)
tabasco hot sauce
1/2 bunch
green onions-sliced thin
oil for deep frying


1Spread crabmeat out on a cookie sheet.
2Sprinkle top with crushed saltine crackers.
3In a small bowl: mix mayo, egg, mustards, Worcestershire sauce, Old Bay seasoning & Tabasco together. Mixing well. Pour mixture over crabmeat/crackers. Sprinkle green onions over top.
4Using hands...Gently mix together. Let stand for 5 minutes.
5Form mixture into 6 crab cakes. Do not pack the batter too firmly. Crab cakes need to be loose, yet hold their shape.
6Heat enough oil in skillet {I used electric skillet}to cover crab cakes half way.
7Deep fry 3 at a time. Fry until golden brown. {3 minutes per side}
8Drain on a paper towel lined pan.
