This is a casserole my mom made for us growing up. Everytime I make it, it reminds me of her. Simple, quick and easy, too.

Ingredients

  • 3 cups egg noodles, uncooked
  • 1 can cream of chicken or celery soup
  • 27 ounces canned corned beef
  • 1 cup milk
  • 1 1/2 cups shredded cheese, sharp cheddar, separated
  • 1/4 cup diced onion, optional
  • 1/4 cup diced green pepper, optional
  • 1/2 cup bread crumbs, buttered

How To Make corned beef casserole

  • Step 1
    Cook noodles just until tender. Drain.
  • Step 2
    Mix together soup and milk until blended. Add in crumbled corned beef, 1 cup cheese, onion and green pepper.
  • Step 3
    Mix with noodles and place in buttered 2 qt. casserole. Mix buttered bread crumbs with remaining 1/2 cup shredded cheese and sprinkle on top.
  • Step 4
    Bake for 30 minutes at 350 until hot and bubbly.
  • Step 5
    Optional: I've mixed corn, peas or mixed veggies into this, as well, to up the veg content.
