This is a casserole my mom made for us growing up. Everytime I make it, it reminds me of her. Simple, quick and easy, too.

3 c
egg noodles, uncooked
1 can(s)
cream of chicken or celery soup
27 oz
canned corned beef
1 c
1 1/2 c
shredded cheese, sharp cheddar, separated
1/4 c
diced onion, optional
1/4 c
diced green pepper, optional
1/2 c
bread crumbs, buttered

How to Make Corned Beef Casserole


  • 1Cook noodles just until tender. Drain.
  • 2Mix together soup and milk until blended. Add in crumbled corned beef, 1 cup cheese, onion and green pepper.
  • 3Mix with noodles and place in buttered 2 qt. casserole. Mix buttered bread crumbs with remaining 1/2 cup shredded cheese and sprinkle on top.
  • 4Bake for 30 minutes at 350 until hot and bubbly.
  • 5Optional: I've mixed corn, peas or mixed veggies into this, as well, to up the veg content.
