This is a casserole my mom made for us growing up. Everytime I make it, it reminds me of her. Simple, quick and easy, too.

  • 3 c
    egg noodles, uncooked
  • 1 can(s)
    cream of chicken or celery soup
  • 27 oz
    canned corned beef
  • 1 c
  • 1 1/2 c
    shredded cheese, sharp cheddar, separated
  • 1/4 c
    diced onion, optional
  • 1/4 c
    diced green pepper, optional
  • 1/2 c
    bread crumbs, buttered

How to Make Corned Beef Casserole


  1. Cook noodles just until tender. Drain.
  2. Mix together soup and milk until blended. Add in crumbled corned beef, 1 cup cheese, onion and green pepper.
  3. Mix with noodles and place in buttered 2 qt. casserole. Mix buttered bread crumbs with remaining 1/2 cup shredded cheese and sprinkle on top.
  4. Bake for 30 minutes at 350 until hot and bubbly.
  5. Optional: I've mixed corn, peas or mixed veggies into this, as well, to up the veg content.
