corn dog muffins

I am no longer purchasing frozen corn dogs because of all the fat and calories. I came up with this alternative to them. My kids enjoyed these with ketchup and mustard.

Ingredients

  • 1 1/3 cups soft white flour (i used freshly ground)
  • 1/2 teaspoon salt
  • 2 tablespoons baking powder
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 cup cornmeal
  • - use all of the above or use two boxes of jiffy cornbread mix. (i don't use jiffy because of the lard.)
  • 1/4 cup oil
  • 2 - eggs, large
  • 1 1/2 cups milk
  • 1 cup grated cheddar cheese
  • 6-8 - hot dogs of choice

How To Make corn dog muffins

  • Step 1
    Combine the flour, salt, baking powder, sugars and cornmeal OR use 2 boxes Jiffy cornbread mix.
  • Step 2
    Add oil, eggs, milk & eggs.
  • Step 3
    Stir in the grated cheddar.
  • Step 4
    Cut up the hot dogs to desired size.
  • Step 5
    Line about 18 muffin cups with liners or grease well.
  • Step 6
    Place hot dog pieces in the prepared muffin cups.
  • Step 7
    Spoon batter over hot dog pieces filling about 2/3 full. These will rise.
  • Step 8
    Bake at 350' for about 12 minutes or until center is set checking with a toothpick.
