corn dog muffins
I am no longer purchasing frozen corn dogs because of all the fat and calories. I came up with this alternative to them. My kids enjoyed these with ketchup and mustard.

Ingredients
- 1 1/3 cups soft white flour (i used freshly ground)
- 1/2 teaspoon salt
- 2 tablespoons baking powder
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 cup cornmeal
- - use all of the above or use two boxes of jiffy cornbread mix. (i don't use jiffy because of the lard.)
- 1/4 cup oil
- 2 - eggs, large
- 1 1/2 cups milk
- 1 cup grated cheddar cheese
- 6-8 - hot dogs of choice
How To Make corn dog muffins

Step 1Combine the flour, salt, baking powder, sugars and cornmeal OR use 2 boxes Jiffy cornbread mix.

Step 2Add oil, eggs, milk & eggs.

Step 3Stir in the grated cheddar.

Step 4Cut up the hot dogs to desired size.

Step 5Line about 18 muffin cups with liners or grease well.

Step 6Place hot dog pieces in the prepared muffin cups.

Step 7Spoon batter over hot dog pieces filling about 2/3 full. These will rise.

Step 8Bake at 350' for about 12 minutes or until center is set checking with a toothpick.
